Hello and Welcome to SuperfoodSiobhan!

Firstly, I'd like to introduce myself- I'm Siobhan, I'm 20 years old and I'm a lover of food, especially breakfast. I live in the UK, and I decided to start this blog after much hassling from my followers on Instagram who wanted an easy way to access my recipes.

I began a journey to a healthier lifestyle in January 2012, after many years of weekly doctor's visits due to suffering with digestive issues. I trialled dairy free, soy free and gluten free diets, none of which were able to relieve the bloating, cramps and general discomfort I was experiencing after eating my favourite foods such as ciabatta bread dipped in olive oil, margherita pizza from our local Italian pizzeria and big bowls of pasta with basil pesto. I researched and researched, and came to the conclusion that perhaps I had IBS, or Irritable Bowel Syndrome. I read that it is best managed with a minimally processed diet high in fibre so I began to make changes such as switching to wholemeal products and consuming more fruit and vegetables. I began eating a proper breakfast, joined a gym and exercised for fun, snacked on fruit during the day and started drinking a lot more water also. After a matter of weeks I started noticing the difference and I realised that my digestive issues were not simply due to an intolerance, but more so because my body wasn't working optimally.

In May 2012 I got a referral to a gastroenterologist and I was diagnosed with IBS. I did a low FODMAP elimination diet, which enabled me to find out which foods were causing me the issues. I was informed that I also have a gluten and lactose intolerance, and that IBS is commonly triggered by any food which is too spicy, acidic, salty or fatty.  Because of that, I eat a minimally processed diet consisting mostly of gluten free grains, fruit, vegetables, nuts and seeds, olive oil and coconut oil, I feel better than I ever have in my life, and my passion for health and food is something I could never go back on.

I am foremost a lover of breakfast, and I consume vast quantities of oatmeal, but I also love experimenting with savoury vegan meals and creating delicious snacks and desserts, as well as adding to my ever growing nut butter collection.
