Long time no post and creating with Zespri Sungold Golden Kiwifruit

Hi all!

I'll admit it, I've been the lousiest blogger since starting university! These days you'll catch me posting on my insta @superfoodsiobhan but not often on here. New (academic) year's resolution is to get back into recipe sharing with you all!

I've had a couple of exciting little collabs and projects across the summer months, one of them being working with Zespri to create some fun breakfast and snack ideas using their golden kiwifruit.


I made this yummy little snack bowl a few weeks back whilst I was doing some life admin stuff. You know, the boring paperwork, tax returns type of thing! This little snack was the perfect way to tide me across from lunch till dinner and prevent a slump getting in the way of productivity.

The homemade granola is SO easy and so yummy, there's a recipe for it here. I used oats here instead and toasted it for a little longer. I paired this with coconut yoghurt, raspberries, the golden kiwifruit and a sprinkle of hemp seeds.

I'm a really big fan of the golden kiwi as there's no tang or bitterness that you may associate with a regular kiwi, making them a perfect addition to a breakast or snack bowl without them overpowering the other flavours. They're super sweet and juicy plus they're packed with loads of vitamin C, more than an orange!

They work perfectly in this snack bowl as there's a great mix of carbs, fat and protein plus plenty of fibre and vitamins from the fruit. Best of all it's tasty!
