Choc Orange Buckwheat Pancakes

It's pancake day! For those not familiar, pancake day is officially called Shrove Tuesday and it's the day before the first day of Lent. Typically all the rich foods that were given up for Lent were finished off on Shrove Tuesday as pancakes.

So after that history lesson let's get onto the good part.

I decided to team up with my friends at Rebel Kitchen and make a fabulous of pancakes for pancake day. And so I did. Using their choc orange mylk I made a stack of super fluffy buckwheat pancakes and now the recipe is going to be shared so you can try them too!

You will need:

2 tbsps chia seeds + 6 tbsps water
1/2 cup (60g) buckwheat flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
1/2 banana, mashed
1/2 cup choc orange mylk

Mix the chia seeds and water together and leave for at least 15 minutes in the fridge to make a thick chia pudding texture.

Meanwhile combine all of the other ingredients well in a large bowl. Mix in the chia mixture. Preheat a frying pan with a little coconut oil and using a 1/4 cup measure, put the dollops of pancake batter into the hot frying pan. Cook for 2 minutes then flip. This should make about 5-6 small pancakes. Top with the other half of the banana and whatever else your heart desires!

  1. yummy! this is so perfect! I had been some days looking for new pancake recipes. I had many combinations including lemon, but I was getting bored of it and wanted to try it with orange, but I wasn't sure whether orange and pancakes were a good option, gonna try this asap!
