Spicy Harissa Butterbean Salad
Yes it is winter but that won't stop me and my salads! I love the taste of harissa, it's a really rich and smoky sort of chilli paste. I add it to almost every savoury thing I cook, I have a spicy tooth!
This butterbean salad would be yummy in a wrap with lots of greens and some hummus, in a salad or taken along to a barbecue or gathering. It'd be a great thing to take along to a picnic too!
You will need:
1 drained and rinsed 400g can of butterbeans
1-2 tbsp harissa paste
2 tbsp olive oil
1/2 clove finely chopped garlic
salt and pepper
Simply combine everything in a bowl and leave to sit in the fridge for a few hours, then serve at room temperature and enjoy!
