Mini Raw Chocolates with Blend Co Skin Mix
It's called a skin mix because you can guess, it's good for your skin. (There isn't any skin in it!!) It's packed full of vitamins, minerals, healthy fats and antioxidants for optimum skin health and I will happily eat anything that tastes good and is good for my skin too!
Other than throwing it on almost everything I eat (pancakes, oatmeal, snacks) I was wondering whether I could use it to make a dessert. Then I came up with the genius plan of making my own version of Pana Chocolate's Coconut and Goji bar, with big chunks of coconut and some added flaked almonds. Heaven.
I made these chocolates in this fabulous new silicone chocolate mould I got off Amazon and it makes it so easy, as you you need to do is invert the base to push each chocolate out. If you're like me and planning to make your own raw chocolates on a regular basis, definitely invest in a chocolate mould!
Makes approximately 12-15 chocolates
You will need:
1/3 cup cacao butter/coconut oil
1/3 cup cacao powder
1/4 cup agave nectar/rice syrup/maple syrup
1/4 cup Blend Co skin mix
1/4 cup flaked almonds
Simply melt the cacao butter/coconut oil in a glass bowl over a pot of boiling water, then stir in the cacao powder and liquid sweetener and mix well to eliminate any lumps. Remove from the heat and stir in the skin mix and flaked almonds. Then simply divide evenly between your chocolate moulds and place the moulds in the freezer to set. Store in the fridge and enjoy at room temperature!
