Healthy Plant Based recipes that make you look and feel great

Cinnamon, Walnut, Sesame, Pumpkin + Sunflower Seed Granola

By Friday, April 18, 2014 , , ,

Another granola recipe you ask? YES! What can I say, I'm addicted to the combination of homemade granola, coconut yoghurt and fresh fruit. This granola is especially tasty with mango, but I bet it'd also be delicious with a chopped up ripe banana, or if you're lucky enough to have stone fruit in season, nectarine or peaches!

Makes 6 servings

You will need:

2 cups oats
1/4 cup walnuts
1/4 cup sesame seeds
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
2 tbsp melted coconut oil
3 tbsps agave nectar
1/2 tsp vanilla extract
1/2-1 tbsp cinnamon

Preheat your oven to 180C and mix all of the above well in a bowl. Then simply pour onto a baking tray and bake for approximately 30 minutes, turning occasionally to prevent it burning/sticking. Once crisp, allow to cool on the tray and transfer to an airtight container for up to 3 weeks.

  1. Could you substitute agave for maple syrup or rice malt syrup?

  2. Hey Siobhan.
I'm just curious, have you ever tried making ice cream (a la Booja Booja) and nut mozzarella (your pizza a few days ago made me drool, literally, haha!) yourself? I know this is totally random, but I was just wondering. anyway, if you ever do, please post the recipe! :D i made your raw chocolate cheesecake the other day and ate some which was still a bit frozen and the upper layer tasted almost(!) like ice cream, it was so good :D

Lastly, I'm going to the UK this summer and definitely paying whole foods a visit. What would you recommend getting? already on my list is coyo, conscious chocolate and some raw nut/fruit bars... but i kind of want to stock up on all these yummy things available in the UK because I can't gem them in my own country ^^

Sorry for this long comment haha

    1. Hi Laura!

I've never tried making my own ice cream because I don't have an icecream maker, but if I get one I'll definitely try. I have made cashew 'cheese' which is just soaked cashews blended with water :)

About the Wholefoods shopping list- have a look at the 'what's in my kitchen' tab and check the massive list of my favourite health foods at the end! Coyo, Conscious Chocolate and Pukka tea are my fave things to buy :)

    1. I don't think you can make granola with that? You need the flat oats, not the little balls
