Chia Banana Pudding

I love my chia puddings, but they're just not enough for breakfast alone, so I created this recipe as a way of making a chia pudding more satisfying and filling. The banana makes it deliciously sweet and it keeps you full for hours due to the high protein and omega 3 content of the chia seeds. It's the perfect breakfast when you want something quick, refreshing and packed full of nutrients.


You will need:

1/4 cup chia seeds
1 cup almond milk
2 bananas
1/2 tsp vanilla extract
Optional 1/2 tbsp superfood powder such as lucuma/maca/mesquite

Mash 1 1/2 of the bananas and leave 1/2 aside to slice on top the next morning. I put my other half into an airtight glass jar and that way it doesn't go brown at all. Put the chia seeds, banana, vanilla extract, almond milk and superfood powder into a jar and shake well until well combined. Leave for an hour, then shake again. Leave in the fridge overnight, then pour into a bowl and serve with the other half of the chopped banana and your choice of fruits and superfoods.

    1. That would work too, but almond milk definitely adds to the flavour, plus the thick texture makes it work better too :)

    1. Because I love the taste of them! Also, junk food really aggravates my IBS and makes me feel tired, grumpy and sick. Now I eat a plant based diet I can't ever go back :)

  4. Haha sorry if that's a stupid question but would this recipe work with flax seed instead of chia?

    1. It would work, but flaxseed has a very overpowering flavour, I wouldn't want to eat a bowl of it!
