Toasted Goji and Cacao Nib Quinoa Buckwheat Muesli
It's delicious enjoyed with almond milk and sliced banana, or even better, with coyo! It's a nutritious and filling breakfast that everyone will love.
Makes 3-4 serves
You will need:
2 cups puffed buckwheat
1 cup puffed quinoa
1/2 cup goji berries
1/2 cup walnuts
1/4 cup cacao nibs
2 tbsps maple syrup (or agave/brown rice syrup, etc)
1 tbsps coconut oil, melted
Preheat your oven to 160C and toss all the ingredients into a bowl, mixing well to make sure everything is evenly coated. Then spread out on a baking tray and bake for approximately 15 minutes, stirring the muesli regularly to make sure nothing burns and it all toasts evenly. Once cool, transfer into an airtight container and enjoy!
