Toasted Goji and Cacao Nib Quinoa Buckwheat Muesli

The name is a bit of a mouthful but this toasted muesli is all sorts of amazing! It's made with puffed quinoa and puffed buckwheat instead of oats, so it's great for anyone who is gluten intolerant or sensitive to oats. It's also packed with the goodness of cacao nibs, goji berries and walnuts, and it's all tossed in a mixture of maple syrup and coconut oil for a hint of sweetness!

It's delicious enjoyed with almond milk and sliced banana, or even better, with coyo! It's a nutritious and filling breakfast that everyone will love.

Makes 3-4 serves

You will need:

2 cups puffed buckwheat
1 cup puffed quinoa
1/2 cup goji berries
1/2 cup walnuts
1/4 cup cacao nibs
2 tbsps maple syrup (or agave/brown rice syrup, etc)
1 tbsps coconut oil, melted

Preheat your oven to 160C and toss all the ingredients into a bowl, mixing well to make sure everything is evenly coated. Then spread out on a baking tray and bake for approximately 15 minutes, stirring the muesli regularly to make sure nothing burns and it all toasts evenly. Once cool, transfer into an airtight container and enjoy!
