Nutty Sour Cherry Raw Chocolate Cups
Better still, they're ridiculously easy to make and are the perfect gift for a friend, a sweet treat after dinner or something nice to bring along to a party or gathering. It's proof that a vegan/gluten free lifestyle doesn't mean eating salad and fruit all day every day, you can treat yourself to something delicious too, but you can nourish your body at the same time!
Makes 5 small cups
You will need:
1/3 cup raw cacao powder
2 tbsps cacao butter + 2 tbsps coconut oil (or 1/4 cup of either)
2-3 tbsps maple syrup or agave nectar
1/2-1 tbsp mesquite powder (optional)
30g (1/4 cup) mixed nuts (I used brazil nuts, walnuts and pecans) chopped roughly
30g (1/4 cup) sour cherries, chopped roughly
Using a hot water bath, melt the cacao butter/coconut oil in a bowl, then add the cacao powder and mesquite powder, stirring well to avoid lumps. Stir in the sweetener, the remove the bowl from the hot water bath and stir in the nuts and dried cherries. Spoon into small cupcake cases and place in the fridge/freezer to set, then enjoy! These are best stored in the freezer, as they melt at room temperature.
