Quinoa Tabbouleh

This is my variation on the original wheat based tabbouleh that I used to love at Middle Eastern restaurants. Quinoa is a true superfood and a complete protein, packed with amino acids which your body needs, and I love it and eat it almost daily. This is great as part of a summer picnic, or as part of a lunchbox instead
Serves 1 as a main or 2-4 as a side dish

You will need:

1 cup cooked quinoa
2 plum tomatoes, diced
1/4-1/3 cucumber, diced
1/3 cup chopped onion
A small bunch of fresh parsley
A small bunch of fresh coriander
A couple of stalks of fresh mint
2-3 tbsps lemon juice
Salt and pepper
Optional drizzle of extra virgin olive oil

Pour the quinoa into a large bowl, then finely chop the herbs, adding them to the quinoa. Add the diced tomato, avoiding the juice, and then mix in the cucumber and onion. Mix well, adding the lemon juice, salt and pepper for extra flavour. You can also add a little extra virgin olive oil for a stickier texture and extra flavour. This salad will keep in the fridge overnight too, and makes an amazing packed lunch
