Creamy Avocado Supergreens Pasta Sauce

This pasta sauce was truly epic. It satisfied my cravings for a dense and creamy bowl of pasta on a cold a rainy day, plus I managed to eat 4 different vegetables without even knowing it! This would be the perfect dinner for a fussy child or even a fussy dinner guest, because the greens are hidden in in the sauce. Not only that, it's also seriously easy to make. 


Serves 4+

You will need:

1 avocado
3 cups spinach
3/4 cup peas
1 clove of garlic
1 tbsp nutritional yeast
The juice of 1 lemon
Salt and pepper to taste
A pinch of chilli

It's literally as simple as tossing all of the above in a food processor until rich and creamy and then tossing with your favourite pasta. This will also keep in the fridge for up to 3 days. Enjoy!

  3. Hi Siobhan, loving all your recipes!!! So straightforward and always delicious. I'm also British and just wondered whereabouts you buy your nutritional yeast? Also do you think it would be okay to use black beans in your tuscan bean recipe? Thank you so much in advance.

    1. I use a Magimix, which are quite expensive, but worth it when you spend as much time in the kitchen as I do! Any old food processor will do the job if you only use it now and then :)

  7. Heyyy :)A friend just gave me your instagram and I immediately fell in love with all your recipes. I wish I could eat like you, well from now on I'm going to try to as much as possible ;).I just have a question. I have trouble making recipes because I'm french and we don't use the "cup" measures but grams. I tried to look the equivalent but there's only conversion for rice, flour, nuts, butter etc... for example in this recipe what does 3 cups of spinach represent in grams? oh and can you use frozen spinach and peas?Thanks for all your sharing it's so great :)

      A cup is about a large handful, I don't actually weigh it. I don't recommend frozen spinach, but defrosting frozen peas is okay!

    2. Well I actually did it with frozen spinach and peas because that's all I had.. It's surely better with fresh vegetables. Anyway it was really good! As the vanilla oatmeal and the sweet potato lentil dahl, this one was so delicious :)!! Keep doing what you do, it's so inspiring, food became my new obsession.

  10. I can't mixed it well with my mixer T.T it stuck. So i need to put quite water inside and it works again. Mixer is difference with processor? It smell very strong with garlic and spinach. (I didn't put peas) should i change another mixer? Btw taste good with pasta, just the smell not everyone can accept. But is thia normal?

  11. I tried it with my pasta at lunch and it was very good and creamy :) but i can't change mixer right now, thinking to add some liquid like almond milk to replace water and let them more easy to be blend :)

  12. This not only looks beautiful, it sounds delicious (and would work perfectly with the picky eaters in my house)! I think adding in some radicchio could help get one more superfood in and not only does it have great health benefits it also adds a gorgeous pop of color.
