Coconut Peanut Butter
Spread it on toast, dip medjool dates or dried fruit in it, dollop some onto your oatmeal, spread it on a banana or devour it off the spoon for a cheeky snack.. the options are endless.
Makes 1 standard 12oz /340g jar
You will need:
1 1/2 cups peanuts
1 cup desiccated coconut
A pinch of salt
Simply heat your oven to 180C and roast the peanuts for approximately 20 minutes, or until lightly browned. Leave to cool completely. Meanwhile, add the coconut to the food processor and process for about 10 minutes, or until it makes a thick and runny coconut butter. Next, put the peanuts into the food processor with the coconut and a pinch of salt and process for about 5 minutes, or until it has reached the desired consistency, scraping down the sides if necessary. Then transfer into a jar and enjoy!
