Coconut Peanut Butter

This takes peanut butter to a whole other level. The sweetness of the coconut paired with the slightly salty taste of the peanuts combines to make something truly heavenly. Seriously, try to stop yourself eating it by the spoonful. It's impossible.

Spread it on toast, dip medjool dates or dried fruit in it, dollop some onto your oatmeal, spread it on a banana or devour it off the spoon for a cheeky snack.. the options are endless.


Makes 1 standard 12oz /340g jar

You will need:

1 1/2 cups peanuts
1 cup desiccated coconut
A pinch of salt

Simply heat your oven to 180C and roast the peanuts for approximately 20 minutes, or until lightly browned. Leave to cool completely. Meanwhile, add the coconut to the food processor and process for about 10 minutes, or until it makes a thick and runny coconut butter. Next, put the peanuts into the food processor with the coconut and a pinch of salt and process for about 5 minutes, or until it has reached the desired consistency, scraping down the sides if necessary. Then transfer into a jar and enjoy!

  1. Sounds amazing but I have tried making coconut butter before and it didn't turn out :( it was just a fine flour and wouldn't get past that no matter how long I processed it for! Any advice?

    1. Sounds like your food processor isn't powerful enough to me! Mine only takes about 15 minutes to make coconut butter, but it's a Magimix and it's very powerful

    2. Is coconut butter supposed to have a gritty texture? Mine turned out that way no matter how long I kept blending ...

    3. It will never be completely smooth unless you're in a hot place, because it is a solid at room temperature :)

  3. I very silly blended the cocnut and peanuts together at the same time and it's went like a thick fluffy texture, is there anyway to save it? I added coconut oil to cream it up but it didn't work, do I just need to blend more?
