Raw Cacao Chia Pudding

This is so delicious and decadent you'll find it hard to believe it's good for you! This chia pudding makes a great on the go snack or even dessert, and it's so bursting with nutrients that you'll be doing your body a real favour. Chia seeds are packed full of proteins and omega 3's, so not only do they keep you full and energised for ages, but they're fantastic for supporting repair of muscles, especially after exercise.

Serves 1

You will need:

3 tbsps chia seeds
3/4 cup almond milk
1/2 tsp vanilla extract
1-2 tbsp cacao powder
1 tbsp sweetener of your choice

Combine the chia seeds, almond milk and vanilla extract in a sealed container or jar and mix or shake well. Leave it in the fridge to gel and thicken for at least half an hour, then mix and shake again, returning it to the fridge for another hour but preferably overnight. When you're ready to eat it, just remove it from the fridge , stir in the cacao powder and sweetener and enjoy topped with your favourite fruits and superfoods.

    1. Just follow the recipe exactly- you don't need to do anything extra like grind seeds
