Creamy Broccoli Soup

On a freezing winter's night, all I crave is soup. I used to absolutely adore Broccoli and Stilton soup, but now I cannot eat dairy, I found myself trying to create a suitable alternative with all the flavour, and without all the dairy. This soup literally takes about 20 minutes to make, so it's the perfect weeknight dinner, and it's so simple, too, you hardly need any ingredients!


Serves 2-3

You will need:

1 large head of broccoli, chopped into small florets
1 tbsp coconut oil
1 large onion
1 large clove of garlic
1/4 tsp chilli flakes
1 cup of water
1/2 can (200ml) full fat coconut milk

Start by steaming your broccoli for approximately 15 minutes, until it's very soft when tested with a knife. Whilst it's steaming, heat a pot with a tbsp of coconut oil, and add the onion, garlic and chilli, cooking on a low heat until the onion is translucent and soft. Once the broccoli is soft, add it to the pot with the water and the coconut milk and put the lid on the pot, letting it all cook for 5 or so minutes, until it's all well combined. Then remove from the heat and puree using a stick blender, and enjoy!

  9. Siobhan, thank you so much for sharing this recipe. It is the most delicious soup I've ever had, let alone made! The touch of chili flakes did wonders. I used half vegetable broth/ half almond milk as a substitute for the coconut milk and it was still amazing.     1. If you usually use something else for flavour instead of onion, use that, otherwise just leave it out
