Vegan Sweet Potato Pancakes

I love pancakes. I love sweet potato. So why not combine the two? These pancakes are a lot moister and denser than normal pancakes, so they're very filling and satisfying on a cold November morning. The combination of spices makes these pancakes taste a little bit like a pumpkin pie and they're full of nutrients too- can you believe you're eating sweet potato for breakfast?! These make the most delicious Sunday brunch or even a cheeky weekday breakfast if you have the day off. Best of all, they're easy to make too.


Serves 1

You will need:

2/3 cup steamed sweet potato ( a very small sweet potato)
1/3 cup (40g) buckwheat flour
1 tsp baking powder
1/4 tsp baking soda
2/3 cup almond milk
1/2 tsp vanilla extract
1 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg

Cube your sweet potato and steam with the skin on for 7-10 minutes, or until soft when stabbed with a knife. Set aside, and allow the sweet potato to cool, then peel off the skins and mash with a fork until smooth. Combine the sweet potato mash with the other ingredients until it forms a smooth batter.

Heat a frying pan with a little coconut oil, and place 1/4 cup of the batter into the frying pan, using a spoon to spread it out into a circle. Repeat this for as many pancakes as you have room for in your pan and cook on a low heat until you start to see bubbles on the upside on the pancake. Flip carefully and cook for a further 2-3 minutes. Repeat until all of the mixture has been used, then transfer to a plate and stack them high with your favourite autumnal toppings.

  2. How do you steam your sweet potatoes? How long do I need to steam them if I do it in a microwave?

    1. I steam mine in a steamer over a saucepan of boiling water. I don't use microwaves, so I have no idea, sorry!
