Double Chocolate Quinoa Cookies

These simple quinoa cookies make the perfect plant based snack, plus they're vegan, gluten free and sugar free, so they're suitable for everyone. Filled with the essential proteins and nutrients of quinoa and almonds, I added cacao nibs and cacao powder for a true superfood boost, to make a moist and delicious cookie that's actually good for you! Even better, they barely take 20 minutes to make.

Makes 9 cookies

You will need:

2 cups cooked quinoa
1/3 cup fresh dates
1/4 cup almond milk
1/4 cup raw almond butter
1/4 cup cacao powder
3 tbsp cacao nibs

Preheat your oven to 160C and get to work on making the gooey date syrup by putting the dates and the almond milk in a food processor and combining until thick and smooth. Transfer to a bowl and mix in the almond butter until well combined, then add the quinoa, and cacao powder, mixing well until combined evenly. It should make a sticky and chunky dough. Lastly, stir in the cacao nibs, and split into 9 even cookies. Place on a baking tray and bake for 15 minutes, or until crispy on top and allow to cool. Enjoy or store in an airtight container in the fridge

      Some sort of nut butter is necessary in this recipe, coconut oil is not the right texture :)
