Blueberry Acai Chia Pudding
I've always heard about the incredible health benefits of acai berries, but I've never tried them up until today! I recently got some Acai Berry capsules from Organic Burst and I added the powder to my usual blueberry chia pudding for a true superfood hit. The combination of blueberry and acai is fantastic, both due to the gorgeous and vibrant purple colour and because of all the antioxidants, which are perfect now the weather is getting cold and everyone's starting to get ill.
I layered my blueberry acai pudding with a vanilla chia pudding, which you can find the recipe for on my blog already, then added some more blueberries and some hemp hearts on top, for a beautiful and delicious snack.
You will need:
3 tbsps chia seeds
1/2 cup frozen blueberries, blended
1/4 cup almond milk
4 acai berry capsules, powder only
Combine all the ingredients in a jar/container and shake/stir well, until combined. Place in the fridge and allow to gel for 30 minutes, then stir/shake again, and return to the fridge for at least an hour more, preferably overnight. Layer with the vanilla chia pudding if desired and enjoy as part of a delicious snack!
