Vegan Carrot Cake Pancakes

These moist and flavoursome pancakes replicate all the wonderful qualities of carrot cake, but for breakfast, what could be better? Not only are they delicious but you're also getting a portion of vegetables in your breakfast. They're incredibly dense and filling, so they make a great Sunday brunch, I swear these fill me up for absolutely hours!


Serves one (makes around 6 pancakes)

You will need:
2 tbsps ground flaxseed
6 tbsp water

1/2 cup (60g) Buckwheat flour
1 tsp Baking powder
1/2 tsp Baking soda
1 tsp Vanilla extract
1/2 Banana
1 large Carrot, grated
1/2 cup Almond milk
2 tbsps Lemon juice

Form your flax eggs by combining the ground flaxseed and the water in a cup. Mix well and leave to gel in the fridge for at least 30 minutes, or until the flaxseed has become thick and gelatinous. Meanwhile, combine the almond milk and lemon juice in a cup and allow to curdle slightly to become buttermilk, this generally takes 20-30 minutes. Sift the flour, baking soda and baking powder into a bowl, and add the mashed banana, grated carrot, almond buttermilk, vanilla extract and flax eggs. Combine well and leave to sit. Preheat a frying pan to a medium heat and add a little coconut oil, and then add approximately 1/4 cup of mixture to the centre of the pan. Allow to cook for 2-3 minutes, or until bubbles form on the upside of the pancake, then flip and allow the other side to cook. Repeat for the rest of the batter, then enjoy topped with the rest of the banana sliced up and other fruit of your choice

  2. do you know anything about coconut flour? would it work as a substitute in this or any of your recipes? ^-^ your recipes are so great btw

    1. I've never used it, so I can't really say, sorry! If you do a Google search you'll be able to find lots of recipes using coconut flour though :)

  3. Hi Siobhan! I was wondering if I could replace the flaxseed by eggs seeing as I am not vegan myself. If so, how many eggs could replace the 2 tbps of flaxseed the recipe calls for? Thanks :)

    1. Hello, I don't actually know, sorry! The recipe might not work the same with eggs- perhaps google for a non vegan one?
