Lemon Coconut and Vanilla and White Mulberry Buckwheat Bliss Balls

I love the nutty taste and texture of buckwheat and I wanted to experiment with using raw buckwheat to make healthy, simple raw vegan snacks that I could take with me to Ireland. The result were these delicious bliss balls, packed full of flavour, protein, healthy fats and nutrients.

You will need:

1/2 cup (100g) Raw buckwheat
1 cup (145g) Raw almonds
1/3 cup (60g) Fresh dates
1/4 cup (20g) Oats (I used gluten free)

1/4 cup (20g) Desiccated (dried and unsweetened) coconut
1 tsp Vanilla extract
2 tbsp lemon juice
The zest of one lemon
1/2 tbsp Maca powder

1/4 cup (25g) White mulberries
1/2 tbsp Vanilla extract
1 tsp Lucuma powder
2 tbsp water

Combine all of the first section of ingredients in a food processor until it makes a moist and thick dough. Split the mixture evenly into 2 balls and place one half in the food processor with all of the second section of ingredients, pulsing until combined, but not overmixing. Allow to cool in the fridge and then roll into 6 even balls. Wash the food processor bowl well, and repeat for the second half of the original dough, adding it to the food processor with the third section of ingredients. Allow the dough to cool in the fridge and then roll into 6 even balls. You can store these in the fridge for up to a week, or freeze them and store them for as long as you like, just allow them to defrost prior to eating!

  1. These sound yummy Siobhan! Cant wait to try them :) Just a question..this might be a dumb raw buckwheat the same as "raw buckwheat groats"? Can you use buckwheat flour as a substitute?

    1. Raw buckwheat groats are just groats (grains) of raw buckwheat, it's the same as saying 'Brown rice grains' which are just grains of brown rice. And buckwheat flour won't work very well as it won't make them crunchy and nutty, it'll make them dry and powdery. I hope you still try them! :)

    3. I just made these using apricots insetad of dates and they turned out lovely! I also added a pinch of vanilla fleur de sel... yummy.
