Raw Vegan Pecan Pie

Autumn is fast approaching, and what better way to welcome it in with style than pecan pie? The classic pecan pie is full of a thick buttery, sugary and eggy cream, and I replaced this with a gooey date caramel, which makes for a less sickly dessert, which is still rich and indulgent. The crust is oaty and wholesome tasting and both my parents and I were in agreement that this beats any other pecan pie out there!


Serves 6-8 people

You will need:

For the Base:
1 1/4 cup Oats (I use gluten free)
1/4 cup Water
3 fresh Dates
1 tsp Cinnamon

For the Caramel:
1 1/2 cups fresh dates
3 tbsps Almond milk
2 tbsp Coconut oil

1/2 cup Pecans to decorate

For the base, simply combine all the ingredients in a food processor until it makes a moist but crumbly dough. Line a pie dish approximately 20cm in diameter with cling wrap and press the base mixture into it evenly. Place in the freezer to set, then get to work on the caramel. Clean the food processor bowl, then process the caramel ingredients until it makes a thick and gooey sauce. Spread it evenly over the frozen base, and press the pecans into it. Place it back into the freezer to set, then defrost slices whenever you want to eat it!

  4. I use medjool dates, but cheaper dates like deglet nour will work too, as long as they are fresh. And thanks!

  5. What can you replace the coconut oil with? would it still work without it? would sunflower oil or a nut oil work?

    1. The coconut oil is absolutely essential to the recipe, it cannot be replaced as it is a solid at room temperature, and other oils are not

  8. Thanks for sharing this recipe! I have made it for a friend who is from the south and misses her pecan pie. She is on a plant based diet due to health concerns and I am sure this will be such a treat.
