Coconut Butter Drizzled Cashew and Apricot Bars
Simple and delicious, the title of these bars explains themselves. They're packed full of protein and healthy fats to sustain you throughout the day.
You will need:
1 cup (200g) natural dried apricots
1/3 cup (25 desiccated coconut)
1 cup (140g) raw cashews
1/4 cup (20g) lucuma powder
1/4 cup (35g) oats
1/4 cup (20g) pea protein powder
2 tbsp water
2 tbsps coconut butter
Combine all the above ingredients in a food processor until it makes a crumbly but moist dough. Line a 8x8" baking tray with baking paper and spread the dough out evenly on it. Freeze for 1-2 hours or until solid, then decorate with drizzled coconut butter. Cut into 12 bars and store in the fridge or freezer.
