Spicy Lentil and Peanut Croquettes

To make a little change from my usual falafels I decided to make a new type of vegan burger using satay sauce as the inspiration. These are a little bit peanutty, a little bit spicy, and full of flavour. I made these ahead of a busy week at work, and they're perfect as part of a lunchbox or as an easy dinner.

You will need:

1 can/265g drained and rinsed lentils
150g raw peanuts lightly roasted at 150C or plain roasted unsalted peanuts
1 small onion
1 small clove garlic
1/2 cup chopped fresh coriander
1 tsp chilli flakes

Preheat oven to 175C and then add the roasted peanuts to a food processor with the fresh coriander until it forms a slightly chunky meal texture. Add the remaining ingredients and process until well combined, then roll  into 16 even balls and bake for 20-30 minutes or until crispy and lightly browned all over. Stores for up to 1 week in the fridge and freezes well too.
