Zucchini Bean Burgers

These burgers are a simple vegan meal base which can be made on the weekend and do an entire weeks worth of lunches. With the almond meal and ground flaxseed, they're a really nutrition addition to any meal, plus they're delicious and so simple to make, too.




You will need:
1 Medium grated zucchini
1 Small chopped onion
1 clove chopped garlic
1 can of drained and rinsed mixed beans
1/4 cup/30g almond meal
1/4 cup/ 30g ground flaxseed
1-2 tbsps Moroccan spice mix (cumin, coriander, tumeric, chilli, cinnamon)


To make the burgers, simply roughly mash the beans with a fork, and then combine all the above ingredients in a bowl. Shape them into 6 even burgers, and then panfry lightly in coconut oil until brown. They store in a container in the fridge for 3-4 days, and freeze well too
