Who am I?

Hello and Welcome to SuperfoodSiobhan!


Firstly, I'd like to introduce myself- I'm Siobhan, I'm 18 and I'm a lover of food, especially breakfast. I live in the UK, and I decided to start this blog after much hassling from my followers on Instagram who wanted an easy way to access my recipes.




I began a journey to a healthier lifestyle in January 2012, after many years of weekly doctor's visits due to suffering with digestive issues. I trialled dairy free, soy free and gluten free diets, none of which were able to relieve the bloating, cramps and general discomfort I was experiencing after eating my favourite foods such as ciabatta bread dipped in olive oil, margherita pizza from our local Italian pizzeria and big bowls of pasta with basil pesto. I researched and researched, and came to the conclusion that perhaps I had IBS, or Irritable Bowel Syndrome. I read that it is best managed with a minimally processed diet high in fibre so I began to make changes such as switching to wholemeal products and consuming more fruit and vegetables. I began eating a proper breakfast, joined a gym and exercised for fun, snacked on fruit during the day and started drinking a lot more water also. After a matter of weeks I started noticing the difference and I realised that my digestive issues were not simply due to an intolerance, but more so because my body wasn't working optimally.

In May 2012 I got a referral to a gastroenterologist and I was diagnosed with IBS. I did a low FODMAP elimination diet, which enabled me to find out which foods were causing me the issues. I was informed that I also have a gluten and lactose intolerance, and that IBS is commonly triggered by any food which is too spicy, acidic, salty or fatty.  Because of that, I eat a minimally processed diet consisting mostly of gluten free grains, fruit, vegetables, nuts and seeds, olive oil and coconut oil, I feel better than I ever have in my life, and my passion for health and food is something I could never go back on.

I am foremost a lover of breakfast, and I consume vast quantities of oatmeal, but I also love experimenting with savoury vegan meals and creating delicious snacks and desserts, as well as adding to my ever growing nut butter collection.

I hope I can inspire you all with my recipes.

  2. Hey! Im just wondering what shops you get your food from? I live in the uk and find it hard to buy health foods from supermarkets or stores and have to resort to getting them online and was wondering if you get your food online too?

    1. Hey Molly! I buy 90% of my food from the supermarket, a little from my local health food store, and then things such as raw cacao powder I buy online because it's cheaper that way. If you're more specific I can tell you exactly where I get items from online :)

    1. Hello, I can't guarantee that a diet like mine will help with your health issues, but I think it's definitely worth a go. A plant based diet has made a real difference to me, and many others :)

  7. Hi, you are one awesome girl, love your recipes! Since I cannot have sugars of any kind, no maple syrup/honey/coconut sugar etc, what can you recommend I use instead?

    1. Hey! It might be worth seeing your doctor about this, and asking for their suggestion, because considering you have a medical condition, I can't really recommend anything!

  11. I totally respect your way of living and rhink that it is great that you follow a plant based diet. I am personally a non vegetarian who also eats tons of vegetables. 5 questions out of interest (if you have the time):
    1) Is rye bread such as Ryvita or German Pumpernickel bread suited to your diet ? Is rye gluten free ?
    2) You mention IBS,soy,gluten,dairy intolerance. Are you also intolerant to meat poultry eggs fish shellfish or do you simply follow a vegan lifestyle as you believe it is healthier and kinder ?
    3) Do you eat oatbran or only oatmeal ?
    4) Do you believe in artificial sweeteners like Splenda ?
    5) Which is the healthiest alternative from your perspective honey, maple syrup or jaggery ?

    1. Hi there!
      Rye isn't gluten free, so I don't eat it.
      I stopped eating meat when I was 10 years for ethical reasons, and I have now shifted to a vegan diet because it is kinder to the environment and to animals.
      I only use rolled oats for for my breakfast, if I need oatbran I'd just put oats in the food processor.
      I don't believe in using artifical anything and I think sugar is okay in moderation.
      I don't think there is any 'healthy' alternative to sugar, they're all the same thing. Sugar is just, no matter the source. It's okay in moderation.

  12. How do you go about living a healthy lifestyle like yours? ive tried searching online but im not exactly sure what im searching for. i am not really looking for the "rawfood" type diet but i want to be eating in a way more like you. can you please help me?

  13. I just found your blog and I am so happy I did! I never normally comment on blogs or anything but I just had to. I'm Irish and I'm 19 and I can literally relate to your entire bio. For years and years I've struggled with stomach problems and was never diagnosed with anything. Only two years ago I finally got diagnosed with IBS and ever since I've been trying desperately to improve my diet etc. to feel better. I was doing quite well and felt a lot better until this year when I started Uni and moved away from home. I still eat quite healthily but obviously laziness kicks in every now and then! It's great to find someone who's in the same boat! :)

    1. That's so wonderful Aoife! (I'm half Irish and I actually have a cousin called Aoife too haha)

      So many people get told they have IBS and they wonder what on earth that actually means, and no one actually knows! Anyone with stomach issues but no real diagnosis is lumped in together and it's very confusing to figure out what exactly is causing the discomfort. I've found a plant based diet to be the way for me and I hope that by sharing my journey I can inspire others to try and conquer their health issues!
