Quinoa Flake Porridge

I have to admit I was hesitant to try breakfast quinoa, firstly because I couldn't imagine it working in a sweet dish, but secondly because how could anything possibly be as good as my beloved oatmeal? However, when I relented and finally tried it, I regretted waiting so long, because it genuinely is very delicious. The quinoa has a very nutty texture which is different to oatmeal, and I think the variety is great, though I wouldn't eat it every morning, I'd miss the gooeyness of my oats too much. Quinoa is a true superfood, which contains high amounts of iron and fibre, but it is also a complete protein, containing all 9 essential amino acids. How could breakfast be even better?
You will need:

60g or approximately 1/3 cup quinoa flakes
1 banana
1/2 cup almond milk
1/2 cup water
1 tsp vanilla extract
Fruit and toppings of your choice

Bring the water to the boil on the stove in a small saucepan and then add your quinoa. Turn the heat down to the lowest and allow them to simmer for approximately 5 minutes. Meanwhile, slice your banana roughly into half. But one half aside, and the other half mash completely into a puree and add to your oats whilst they cook. Stir thoroughly and then add in 1 tsp of vanilla extract. When your quinoa has thickened up to your desired consistency pour into a bowl and top it with the other half of your banana, in slices, and your desired toppings.

You can use this recipe as a base for any other of my oatmeal recipes, simply cook the quinoa as above, and add the other ingredients the same as you would for oats! I personally adore carrot cake and apple pie quinoa

  1. how much water do I need to use, and do you still make the egg white oatmeal ever? I haven't seen a recipe for it, and was wondering whether you could do one? love love love all your recipes! stay amazing! x

    1. Sorry, 1/2 cup each of water and non dairy milk. And nope, I don't do it anymore, I kinda went off the taste of it :)
