Dark Chocolate Goji Power Bars

These bars make the perfect snack when travelling or exercising- they're gluten free, high protein and full of superfood goodness. Goji berries are a nutritional powerhouse with more Vitamin C  than an orange, more beta carotene than a carrot and more iron than steak- what's not to love?! These superfood berries are also high in a variety of antioxidants, so they're the perfect way to sneak extra nutrition into your diet. I sprinkle mine on oatmeal, add mine into baking or just consume a handful by themselves.

These bars are inspired by a recipe I found on Elana's pantry, however I modified them a little to suit my needs, such as substituting in some protein powder to make them a more filling snack after a bike ride or run.  However, if you want these to be snacks rather than protein bars, feel free to use 1/4 cup more nut meal or flour of your choice instead of the pea protein powder.

You will need:

1/2 cup goji berries
3/4 cup ground almonds
1/4 cup vegan pea protein
1/3 cup dates
1/4 cup water
1 tsp baking powder
2 tbsp ground flaxseed
1/2 cup dark chocolate chunks

Preheat your oven to 175C and then soak your goji berries in boiling water, and leave them for 15 minutes. At the end they should swell up and become plump and moist. Process your dates with the water until it makes a gooey syrup, then combine it with the remaining ingredients well in a bowl. Once mixed, fold in the goji berries gently. Pour into an 8x8" greased baking dish and bake at 175C for 15-20 minutes or until lightly brown on the top. When cool, cut into 8 bars and store in the fridge for up to a week, removing a few hours prior to when you want to eat it to allow it come to room temperature.
