Cacao Quinoa Bites

I'm a real fan of quinoa and I consume it on a daily basis. It's a high protein grain full of nutrients, and it's so easy to cook too, I always make more than I need so I have some left sitting in the fridge.  As someone who is gluten intolerant, it's the perfect grain to go with curries or stir fries and I love it as a base for salads too. I've never experimented with quinoa in desserts/baked goods before, but after my success with quinoa porridge, I knew I had to give it a go.

These cacao quinoa bites are packed full of superfoods and are high in protein and fats to keep you sustained. Stored in the fridge, they'll last for up to 2 weeks, and they're perfect to take with you on the go when you need a burst of energy.


You will need:

1/2 cup /90g almonds
2 tbsp/15g chia seeds
2 tbsp/15g flaxseed
1/2 cup/85g medjool dates (Or dried dates soaked in hot water for 15 minutes and then drained)
3 tbsp/ 20g cacao powder
1 cup cooked quinoa (1/3 cup dry quinoa cooked in 2/3- 1 cup water for 15-20 minutes)

Decorations to roll in eg: cacao, chopped nuts, goji berries, desiccated coconut, flaxseeds. etc

Combine all the above ingredients to make a thick dough, excluding the quinoa, in a food processor, adding a little water if it is too dry. Once it has reached the desired texture, add the quinoa and pulse until well mixed. Transfer into a bowl and refrigerate for at least an hour, then roll into 8 balls and coat with your desired ingredients, I used goji berries, walnuts and desiccated coconut. Store in the fridge for up to 2 weeks, if they last that long!
